Past Couple of Weeks

Now that I am on vacation I have some time to update my blog.

Between banquets and the restaurant, it has been really busy around the hotel the past few months. We are just now coming out of our busy season, so it will be nice to have a little break before it picks back up again. Here are some pictures from the last couple weeks.

Above is a picture of some really nice tuna we received from off the coast of South Carolina. We had some VIP guests come in so I did some special courses for them. I did not get pictures of all of them, but, oh well. This tuna is with caramelized pineapple, macadamia nut, coconut foam and a little curry sauce.

Then we had the Cherry Blossom Festival. All the local restaurants run special menus that involve cherry’s or cherry blossoms, which is kinda weird because cherries are not in season right now. So it’s not the easiest thing to get your hands on any good ones. We just ended up using dried cherries which worked out good.

We did a 3 course menu which was, foie pate with a dried cherry chutney, venison loin with a cherry demi, and a cherry and caramelized with chocolate creme brulee.

It was all very nice, but unfortunately, it was too busy and I was not able to get pictures of any of them.
