We ran this special tonight which is one of my favorite ways to serve lobster.

I did pickled fennel, orange, bacon, miso and lobster. Its a really nice balance of flavors.


Star Chefs

I have been working like a slave these past couple weeks, trying to get the new menu going while short handed. It has been a struggle, but things seem to be panning out.

It was nice to get the chance to go to the Star Chefs Congress this past week in NYC. I attended several seminars to watch influential chefs cook and listen to their thoughts on food. It was inspiring.

I met some of the best chefs in the industry right now. Johnny Iuzzini is an awesome pastry chef, definitely in the top 3 of my list.

Grass Fed Beef

Local Beef
I have been getting grass fed local beef that is amazing. The color is a dark red, with nice marbling.

All of our beef gets sous vide with some fats and star anise. I read somewhere that if you put 1 clove of star anise in the bag when you sous vide them, it enhances the flavor of the beef. I tried it and it really made a difference.

My pasta machine finally came in, so we are now making our own pasta. I think pasta is one of the most gratifying things to make.

When you make a good dough, roll it out nice and thin, make what ever cut you want, and cook it, its one of the most amazing things there is. Fresh pasta is one of my favorite foods.
